Gather salt, spring onions, lime, red pepper and cucumber.

Gather tomatoes, red chillies, red wine vinegar and fresh basil.

Rip the stems from the red chillies, then cut them in half lengthways.

Remove the seeds from the red chillies if you prefer a milder flavour, then finely chop.

Cut the red pepper in half and cut out the stem and seeds.

Trim and finely slice the spring onions.

Finely dice the tomatoes.

Cut the cucumber in half lengthways and scrape out the watery middle with a teaspoon, then finely dice.

Combine ingredients

Put the red chillies, red pepper, spring onions, tomatoes, and cucumber into a bowl.

Zest the lime, cut it in half and squeeze the juice into the bowl, catching any pips.

Add the red wine vinegar and tear the fresh basil leaves into the bowl.

Season with salt and black pepper to taste.
