Gather garlic powder, fresh coriander, red onion, cherry tomatoes and salt.

Gather limes, olive oil, avocados and red chilli.

Prepare chilli, onion, tomatoes

Rip the stem from the red chilli, cut it in half lengthways and remove the seeds, if you prefer a milder flavour, then finely chop.

Peel and finely chop the red onion.

Finely chop the cherry tomatoes.

Prepare the avocados

Put the chopped red onion and cherry tomatoes into a bowl.

Halve and carefully stone the avocados by tapping the stones firmly with the heel of a knife.

Twist and remove the stones from the avocados.

Scoop the flesh of the avocados into the bowl.

Use the back of a fork or a potato masher to roughly mash the avocados.

Make sure you keep some lumps of avocados for texture.

Add the flavours

Discard any large stalks from the fresh coriander and finely chop the leaves.

Add fresh coriander to the bowl.

Cut the limes in half and squeeze over the juice, catching any pips in your other hand.

Add the salt, garlic powder and olive oil and stir everything together with a wooden spoon.

Taste and adjust the seasoning as desired.
